Sweet Potato Quinoa with Lemon-Miso Dressing 

Dressing 

4 tbsp. Miso Paste 

6- 10 tbsp. hot water 

1 tsp. grated fresh Ginger cone #1 

1 tsp Maple Syrup 

Juice 1 Lemon 

2 Sweet Potatoes or Yams cut with cone #3 

1 ½ cups Quinoa 

3 cups water or veg stock 

1 cup fresh Parsley minced 

Instructions 

Place Quinoa, Broth and Sweet Potatoes in EOC start at 400 degrees.  Medium Click Low Cook for 30 minutes, until soft. Gently mix in dressing, top with Parsley and serve.

Beet Cabbage Salad and Mustard Dressing 

1 small head Red Cabbage  Cone #4 

1 large Beet shredded cone #2 

1 Green Apple cone #2 

¼ cup Pumpkin Seeds 

Fresh Lentil Sprouts or other Sprouts 

Dressing 4-5 tablespoons Raw Cider Vinegar or Lemon Juice 2 tablespoons Maple Syrup  ¼ cup Extra Virgin Olive Oil 1 teaspoon Dijon Mustard Freshly ground Black Pepper and Sea Salt 

Directions 

Shred Cabbage, Apple and Beet. 

To make the dressing, whisk the vinegar, syrup, oil and mustard together. Season well with black pepper then pour over the shredded vegetables and toss well. Ready to serve. 

DETOX Benefits: Pumpkin seeds - Pumpkins contain zinc which is a mineral that builds up the intestinal lining, making it harder for parasites to invade your body. Red cabbage has a high level of polyphenols the same complex antioxidants found in red wine, blueberries and green tea linked to the prevention of cardiovascular disease and cancer. Cabbage is a great cleanser as well thanks to its glucosinolate content which produces anti-inflammatory and cell-detoxifying compounds. Cabbage juice is an age-old remedy for stomach ulcers, and recent research is suggesting a sure link between cabbage and healthy digestion. It is an excellent source of fiber (super important for cleansing), Vitamin C (Immunity), and Vitamin A.  Sulforaphane, in Cruciferous veggies is already known to trigger the liver to produce enzymes that detoxify cancer-causing chemicals. Beets detox the liver.

Gourmet Cleansing “Cream” of Asparagus (and/or Zucchini) Soup 

4 Cups Boiling Water 

1 Pound Asparagus and/or Zucchini cut in Lg pieces 

1/2 Lemon, sliced with rind 

1 Cup raw Cashews (or raw almonds, soaked overnight) 

Pinch of Nutmeg 

Celtic or Himalayan Salt and Cayenne Pepper to taste. 

Add all ingredients to blender (you made have to do this in 2 batches). Blend about 2 minutes and enjoy!  Or

Put Asparagus and ¼ cup water in a large 5 or 7 qt pan. Medium Click Low. Then transfer to blender and add remaining ingredients and blend until creamy. 

 

DETOX Benefits: Asparagus is a member of the lily family, which also includes onions, leeks and garlic. Asparagus is the only food to contain the chemical asparagusic acid. When this aptly named chemical is digested, it breaks down into sulfur-containing compounds, which have a strong, unpleasant scent. Eating asparagus can help control diabetes, act as a diuretic and prevent kidney stones.

Detox Cruciferous Sauté  

1 head Broccoli cone #3 

½ head Cabbage 

 1 cup Sauerkraut ferment 

 ½ Onions cone #2 

 2 cloves Garlic cone #1 

1 tsp Mustard Seed & Salt and Pepper 

 

In large skillet- preheat and sauté Garlic & Onion. Add in Cabbage and Broccoli. 

Add in all the rest of ingredients (except Sauerkraut). Cook Medium Click Low for 10 to 15 minutes (until tender) add Sauerkraut ferment, stir and season to taste.

 Oatmeal with Fruit 

2 cups fruit in season 

1 cup water 1/2 cup Old Fashioned Oatmeal (not quick) 

pinch of Salt and pinch of Cinnamon 

Directions 

Add water, Cinnamon and Salt in 1 Quart Sauce Pan on medium high heat.  Bring to a boil – add in Oats, cover until clicker sounds, turn down to low for 5 minutes. Top with fruit

What are Green Drinks Smoothies?  

 A blended Drink mixed with Greens and Fruit. 

A good Smoothie is 60% fresh fruit mixed with 40% green leafy vegetables. 

Here are great greens and fruits for smoothies:  

Dandelion Greens  (tons of calcium)   / Kale (tons of calcium)  / Lettuce /   Celery  / Watercress / Escarole / Mustard Greens / Turnip Greens / Carrot Tops / Collard Greens / Broccoli / Cabbage / Parsley / Cilantro / Kohlrabi

Then add some combo of fruits like: 

Apples / Pears / Bananas / Oranges / Papaya / Pineapple /  Kiwi / Blueberries / Raspberries / Strawberries / Watermelon / Cucumber
